A food product which derives from animal skin and bone, and contains a large amount of protein. The skin and bones of animals are boiled to produce the gelatine which is gummy, colourless and tasteless. It is used as a food additive, mainly to thicken food such as jelly, icecream and confectionery. It is also used as a protein supplement.
